Not only are these salads delicious tasting but they are packed with the nutrients to keep your tip top shape through the Winter months. They pair perfectly with a hot dinner, but equally satisfying for a meal on the run.

The distinctive purple flesh of a beetroot is a giveaway that this salad is packed with antioxidant goodness. Antioxidants provide most of the colour of fruits and vegetables. Combined with the protein, carbohydrate (good carbs), fibre and mineral variety of the ‘pseudo grain’ buckwheat (actually a seed but looks like and nutritionally is similar to a grain), this salad is a real post exercise recovery winner.
Cauliflower is a cruciferous vegetable that is naturally high in fibre and B-vitamins. Oven roasted with turmeric not only is it beautiful in colour it taste delicious and has the added anti-inflammatory benefits that turmeric brings. The dish is also packed full of anti-oxidants thanks to the combinations of vegetables and spices. And importantly when veggies like cauliflower and spinach taste as good as they do in this salad, we are sure to be on our way to eating our recommended five servings of vegetables per day.
If you think you don’t like Brussels sprouts, then think again. Roasting the sprouts caramelises the natural sugars making them sweet, tender and delicious. And if you think of pecans in a pie you will be pleasantly surprised how good they are in a salad, adding protein and healthy fats. A handful of nuts a day is known to be beneficial for heart health.
