Winter Super Salad

WINTER SUPER SALAD

with buckwheat, goats cheese and golden linseed

Energy: 1020kj Protein: 9.8 Carb : 25.1

Vegetarian, Gluten Free

This salad really does have it all. Flavour, texture and nutrients to boot!

The distinctive purple flesh of a beetroot is a giveaway that this salad is packed with antioxidant goodness. Antioxidants provide most of the colour of fruits and vegetables. Combined with the protein, carbohydrate (good carbs), fibre and mineral variety of the ‘pseudo grain’ buckwheat (actually a seed but looks like and nutritionally is similar to a grain), this salad is a real post exercise recovery winner.

WINTER GREENS

Brussels sprouts with parmesan and pecans

Energy: 718kj Protein: 8.6kj Carb: 15.5

Vegetarian, Gluten Free

If you think you don’t like Brussels sprouts, then think again. Roasting the sprouts caramelises the natural sugars making them sweet, tender and delicious. And if you think of pecans in a pie you will be pleasantly surprised how good they are in a salad, adding protein and healthy fats. A handful of nuts a day is known to be beneficial for heart health.

Brussels Sprouts; this super green has been reborn.
